Makes 2 cups
Prep time: 30 - 45 minutes to cook beets
Assemble time: 5 minutes
2 cups cooked red beets, roughly 2 medium - large beets
2 tablespoons balsamic vinegar
1/4 cup walnuts
4 oz goat cheese
Place peeled, cooked beets, balsamic vinegar, walnuts and goat cheese in food processor
Puree ingredients until smooth
Enjoy as a dip for bread, crackers, vegetables and or on crostini as a great passed appetizer
