Beet and Goat Cheese Pesto Recipe

Vegetarian, gluten free

Makes 2 cups 

Prep time: 30 - 45 minutes to cook beets 

Assemble time: 5 minutes 


INGREDIENTS

2 cups cooked red beets, roughly 2 medium - large beets  

(see my 3 simple steps for cooking beets here)

2 tablespoons balsamic vinegar 

1/4 cup walnuts 

4 oz goat cheese 


STEPS

  1. Place peeled, cooked beets, balsamic vinegar, walnuts and goat cheese in food processor

  2. Puree ingredients until smooth 

 

NOTES

Enjoy as a dip for bread, crackers, vegetables and or on crostini as a great passed appetizer
